(0:01:33) [Instructions en francais ci-dessous] Ingredients (serves 8) 1 C rice 8 C water 2 chicken bouillon cubes 1" piece of peeled fresh ginger 1 t salt 1 T + 1 1/2 t soy sauce 1 lb whole chicken pieces (with bone and skin) 1/2 t pepper 1/2 lb ground pork 2 T corn starch 2 T water 1 1/2 t sugar 1/4 t pepper 1/2 t salt 1/2 t minced ginger 1 1/2 t oyster sauce 2 eggs 3 green onions 4 T chopped cilantro 1/2 C shredded lettuce 12 diced raw shrimp Combine rice, water, bouillon cubes, 1 t salt, 1/2 t pepper, 1 T soy sauce, 1" piece of ginger, chicken pieces and water in a large pot. Bring to a boil, then cover and reduce heat. Let simmer 1 1/2 hours. Next, make pork balls: Combine 2 T corn starch and 2 T cold water in a bowl, then add grated ginger, 1/2 t salt, 1/4 t pepper, sugar, oyster sauce, and 1 1/2 t soy sauce. Combine this sauce with ground pork in a food processor to make a smooth paste and set aside. Scramble two eggs. These can be poured directly into the soup while stirring constantly, or they can be fried as an omelette, which can be cut into small pieces and added to the soup. When the chicken has simmered for 90 minutes, remove it from the soup, remove all meat from the bones, and add the meat back into the soup. Remove the ginger piece from the soup. Make small balls from the pork paste and add them to the soup. Then add the shrimp, cilantro, green onion and shredded lettuce. Stir well, adjust the seasonings to taste and serve hot.
